Welcome to Mike's and Kate's Outlaw Homebrew.
We have been brewing beer now for eight years or so and decided to share the alco...knowlege. Listed below are some of our better brews and the general way in which we went about brewing them. Remember, brewing is an art. It is something which takes years and years to master and only minutes to drink.

Extract Recipes:

Recipe for "Two If By Espresso"

Ingredients:
10 lbs Dark Malt Extract
40 grams Fugels Bittering Hops
20 grams Cascade Finishing Hops
1/4 lbs Black Patent Hops
1/4 lbs Crystal Malt
1/2 can of Trader Joe's coffee
1 package ale yeast

Comments:
Strong coffee flavor
Its a good 'un

Instructions:
One hour boil
Add Black Pattent & Crystal Malt
to cold water, remove when boiling. 
Extracts and bittering hops added 
at begin of boil. Finishing hops & 
crushed (NOT ground) Coffee Beans 
at 5 mins until end of boil.

Notes:
Two week pimary fermentation
Two week secondary fermentation


Recipe for "Atila the Honey"

Ingredients:
5 lbs Dark Malt Extract
1 lbs Crystal Malt
2.5 lbs Light Desert Honey
1.5 oz. Saaz  hops
1/2 oz. Tettinager hops (flavoring)    1/2 oz. Saaz  hops (finishing)
2 packages Lager Yeast

Comments:   Really good!  We liked this one alot!

Instructions:
Add Crystal to cold water, bring to boil.   Forty-five minute boil.  Flavoring hops at 10 minutes until the end.   Finishing at 2 minutes to the end.

Notes:
3% alcohol



All Grain Recipes:

Recipe for "Eighth Day Brew: On the Eighth Day They Brewed!"

Ingredients:
10 lbs Two-Row Malt
1/2 lb  Light Crystal Malt
1.5 oz. Cascade hops
1/2 oz. Cascade(finishing)
White Labs Pitchable California Ale Yeast #WLP001

Comments:  This is one of the best beers we ever made! Very Good!

Instructions:
Mash with 10.5 quarts at 152 F for 90 minutes. Sparge with 5 gallons water at 170 F. Ninety minute boil.

Notes:
One week primary, 4 weeks secondary.


Recipe for "The Trap!"

Ingredients:
9 lbs Two-Row Malt
1 lb Light Munich
1/2 lb Medium Crystal Malt
1/8 lb Black Patent Malt
1 lb. Belgian Dark Sugar Candy
1 oz. Styrian Goldings Hops
1 oz. Hallertau hops(flavoring)
1 oz. Saaz (finishing)
1 tsp. Irish Moss
White Labs Pitchable Belgian Trappist Yeast

Comments:  This beer was pretty good.

Instructions:
Mash with 11 quarts at 155 F for 90 minutes. Sparge with 5 gallons water at 170 F. Ninety minute boil. Add candy at the beginning of the boil along with bittering hops. Add flavor at 45 min. Irish moss at 80 min. Saaz at 88 min.

Notes:
Two weeks primary, 4 month secondary. Seven percent alcohol.



Mead Recipe:

Recipe for "Mead"

Ingredients:
16 lbs Honey
2 tsp. Acid Blend
5 tsp. Yeast Nutrient
White Labs Sweet Mead Yeast #WLP720

Comments:  Very good after 12 months in bottles!

Instructions:
Bring 2 gallons water to boil. Add honey. Let cool to 180F. Keep at 180F for 30 minutes. Chill. Add to cold water in fermenter (5 gallons total). Add Acid and Nutrient. Pitch yeast.

Notes:
Two weeks primary, 4 month secondary. 4 months tertiary then bottle. Bottle-condition for 12 months.
